Not just vegetables dipped in ranch dressing or drenched with cheese.
The most frequently requested vegetable from my 5 year old?
I am overjoyed that she likes, and actually begs for KALE!

How do I get my picky eaters to eat and beg for kale? Here’s my quick recipe for baked kale!
Prep Time: 5 minutes
Cook Time: 8-9 minutes
Total Time: 13-14 minutes
Kale : 7 stalks
Garlic : 2 cloves (more or less depending on your love for garlic!)
Extra Virgin Olive Oil : enough to coat your kale (about 1 tbsp…ish)
Salt : 1-2 tsps
After thoroughly washing the kale, tear the leaves from the stalk and place in a bowl. Then, tear the leaves into smaller pieces.
Next, mince (I used my garlic press!!) both cloves of garlic onto the kale.
Then, drizzle olive oil over your kale…enough to coat each piece, and toss.
Or, have a helper toss it for you 🙂
Next, spread the kale onto an ungreased baking sheet. Be sure to spread the kale as evenly as possible.
Sprinkle a few pinches of salt over the kale…I don’t salt the heck out of these!
Then, put your pan in the oven for about 8-9 minutes, depending on how crisp you like your baked kale. I always check on the kale after about 5 minutes, repositioning the leaves if I need to.

They’re crispy, delicious, garlicy, little drops of paradise that almost melt in your mouth!
